Short pasta

Short pasta are possibly the most popular and most frequently prepared style of pasta because it is so versatile.

On the list of short pasta we find penne, fusilli, rigatoni, gemelli and macaroni to name just a few. As with pasta shapes, short pasta have their origins in particular regions of Italy. for example, Paccheri are a kind of pasta in the shape of very large tubes, originating from Campania and Calabria. Paccheri look as though they should be stuffed but they are more often served with a robust sauce.

Rigatoni is a favourite short pasta in southern regions of Italy and especially Sicily. The word rigatoni comes from the Italian word rigato meaning ‘ridged’ or ‘lined’. These ridges are the perfect surface for sauces and melting cheese.

Macaroni has a more colourful story to tell. The first recorded documented recipe dated back to 1367 – 1400, from the court of King Richard II of England, called ‘Macrows‘ and is said to have originated in France. You can read more about that right HERE.
