Pastina are those tiny pieces of pasta used in making soups and there are quite a range of them. Tiny stars, dots and even alphabet spaghetti is considered to be a pastina.

Here at The Big Dream Factory, The Pasta Maker creates only a few pastina using different flavoured dough and of course by hand.

Perhaps our most interesting one is called Fregola Sarda. These are small dots of pasta which are baked until they are golden brown and left to cool. They have a wonderful nutty flavour when added to a soup where they will take a while to cook to al dente. We love them!

The Pasta Maker also makes a gluten free version of detalini and ancini di pepe often available in different flavours depending on what is in season.
